Collard Greens Recipe *WARNING! You WILL be addicted to this!*

And good evening y’all!

Lately, I’ve been doing my usual Green Smoothie breakfast, and random salad/veggies/nuts/seeds/fruit throughout the day, but I’ve wanted cooked food for dinner.  I had to make a few major life decisions lately, and usually when I’m stressin’, I prefer the comforts of warm food.  Still trying to keep it really healthy, though, so I thought I’d share what I’m literally eating for dinner right now.

WARNING!!  This dish is incredibly fast and easy to prepare, nutritious, vegan and gluten-free, and fucking delicious.  You WILL become addicted to it.  Make more than you intend to eat, because you will be sad when you run out.  It’s hard to even put down my fork to write this.  Don’t say I didn’t warn you!

Behold:  Collard Greens with Stone Ground Mustard and Tamari

Without further ado, the recipe (with- apologies- my usual “approximate” measurements):

Heat up a small amount of coconut oil in a skillet to medium heat

Chop 1 whole, small or medium onion (white or purple, whichever you prefer!)

Crush several cloves of garlic (I use more than average, I would suggest maybe 3 cloves if you aren’t a fiend?)

Put onion and garlic in the skillet and lightly brown for a few minutes

Add to the skillet:

1/2 bag of frozen, chopped collard greens

a large splash of Tamari (a gluten free soy sauce alternative)

2 big spoonfuls (or more if you want more flavor/spiciness!) of stone ground spicy mustard

a little water (maybe 1/3- 1/2 a cup)

Stir occasionally as it all warms and sizzles together, and the greens are warmed through

That’s it!  Here’s a closeup of the ONLY 2 seasonings in this recipe- it’s so damn flavorful, it needs nothing else!  You can find Tamari in the Asian section of most grocery stores these days.

BONUS!  Add a can of organic, drained black beans to make it a really filling, vegan dinner.
